allow ability to hide categories available for selection in the associate image dropdown

there are many categories we do not use day to day and having the ability to clean up the options on that dropdown makes it so we can only have the ones we use regularly show up and hide the ones we rarely use and if we would need to use one we could go and unhide the category when necessary
