Allow logging of EASI Service & EASI Data Service while running in the background

There should be a setting to allow log files to be created & retained for a certain number of days. Currently output/logging only occurs when the service is stopped and runs in the foreground, however we are always running the programs as service in the background which means we never know where the service stalled when running in the background.
