Rename the "Book" entitlement to EFT

Since the transfer methods have been updated to move away from the idea of "Book Transfers" vs "AP Book Transfers", the "Book" entitlement should be renamed to better indicate its function (i.e. "EFT"). 

There are already entitlements for ACH Debit, APBook, etc., and this enhancement would make the entitlements consistent.
